Growing up, I always loved baking desserts with my mom. One of our favorites to make was fresh strawberry cobbler. We would pick strawberries at my grandma's house, come home, wash them, make the crust, and bake until our whole house was filled with a delicious smell. Now that I'm at college, I don't get to enjoy my mom's baking as often as I used to , but this cobbler makes a quick, tasty alternative. It's a healthy choice for breakfast, a snack, or dessert, and you can easily customize the recipe based on your preferences or the ingredients you have on hand. Enjoy!
Ingredients:
-about one cup canned fruit (peaches, pears, or a combination of your choice; If you have them, you can also add fresh mango, plum, or orange to give the cobbler an extra fruity kick.)
-one third cup of granola or granola cereal
-one tablespoon orange juice
-sugar, honey, or other sweetener (optional)
Directions:
1. Put all the fruit in a microwave safe bowl. (If possible, use a shallow bowl rather than a deeper one.)
2. Top with granola.
3. Microwave on high for three minutes. Allow cobbler to cool for two minutes.
4. (Optional) Add sugar or honey on top for extra sweetness.
5. Serve with whipped cream, ice cream, or frozen yogurt if desired. Enjoy!
